This flavorful one-pan dish combines tender chicken, colorful vegetables, and aromatic spices for a quick and satisfying meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts (Choose for quick cooking)
  • 1 cup long-grain white rice (Rinsed)
  • 2 cups chicken broth (Use low sodium)
  • 1 cup bell peppers (Colorful and sweet)
  • 1 medium onion (Finely chopped)
  • 3 cloves garlic (Minced)
  • 1 cup carrots (Diced)
  • 1 cup frozen peas or green beans (Added at the end)
  • 1 tbsp olive oil (For sautéing)
  • 1 tbsp smoked paprika (Adds smoky warmth)
  • 1 tsp dried thyme or Italian herbs
  • 1 tsp salt (To taste)
  • 1 tsp black pepper (To taste)
  • 2 tbsp fresh parsley or cilantro (Chopped, optional)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
  • Add onion, garlic, and spices; sauté until fragrant, about 2 minutes.
  • Stir in rice, bell peppers, carrots, and chicken broth. Bring to a boil, then reduce heat and simmer covered for 15 minutes.
  • Stir in frozen peas or green beans and cook for another 2-3 minutes until heated through.
  • Garnish with chopped parsley or cilantro before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
