Ingredients

Protein

  • 4 pieces Boneless, skinless chicken breasts (choose even-sized pieces for uniform cooking)

Vegetables

  • 4 cups Fresh spinach leaves (add at the end to wilt gently)
  • 2 cups Ripe tomatoes diced

Aromatics

  • 3 cloves Garlic minced
  • 1 medium Onion finely chopped

Oils & Seasonings

  • 2 tablespoons Olive oil (for searing)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried Italian herbs
  • 1/2 teaspoon Crushed red pepper flakes (optional)

Fresh herbs & cheese

  • 1/4 cup Fresh basil leaves torn
  • 1/2 cup Grated Parmesan cheese (for serving)

Instructions 

  • Season chicken breasts with salt, pepper, and Italian herbs. Sear in olive oil until golden, then set aside.
  • In the same pan, sauté chopped onion and minced garlic until fragrant.
  • Add diced tomatoes and cook until they soften, then return chicken to the pan and simmer for 5 minutes.
  • Stir in spinach leaves and cook until wilted, then sprinkle torn basil and Parmesan cheese on top before serving.

Notes

Use even-sized chicken breasts for uniform cooking and adjust red pepper flakes to taste for spice.
