A comforting and hearty chicken noodle soup that's easy to make and perfect for any day.

Ingredients

Base

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion (chopped)
  • 2 medium carrots (peeled & sliced)
  • 2 sticks celery (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 2 cups water
  • 1.5 pounds uncooked chicken fillets
  • 1/2 teaspoon italian seasoning
  • 2 cups uncooked egg noodles
  • salt & pepper (to taste)
  • 1 tablespoon fresh parsley (chopped)

Instructions 

  • Sauté oil, butter, onion, carrots, and celery for 5-7 minutes.
  • Add garlic and cook for 30 seconds.
  • Stir in broth, water, chicken, and seasoning; bring to boil, then simmer for 15 minutes.
  • Add noodles and cook for 8 minutes, stirring occasionally.
  • Shred chicken, return to pot, season with salt, pepper, and add parsley.

Notes

For extra flavor, use homemade chicken broth if available.
