Ingredients

Oil

  • 1 ½ teaspoons sesame oil
  • 4 teaspoons neutral oil (like avocado or canola) (divided)

Chicken

  • ¾ pound chicken breasts (cut into very small pieces)
  • 5 tablespoons low-sodium soy sauce (divided)

Dairy & Eggs

  • 4 tablespoons butter (divided)
  • 2 teaspoons fresh lemon juice
  • salt to taste salt
  • pepper to taste pepper

Vegetables

  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables (peas, carrots)

Eggs

  • 2 large eggs

Cooked Rice

  • 4 cups cooked rice (cool to touch)

Garnish

  • optional for garnish sesame seeds

Instructions 

  • Heat 1 teaspoon sesame oil and 2 teaspoons neutral oil in a large skillet over medium-high heat.
  • Add chicken pieces and cook until browned, then remove and set aside.
  • In the same skillet, add butter, onion, and vegetables; cook until tender. Push to side.
  • Scramble eggs in the cleared side of the skillet, then mix with vegetables. Add cooked chicken, rice, soy sauce, lemon juice, and remaining butter; stir well.
  • Season with salt and pepper to taste. Garnish with sesame seeds if desired.

Notes

Use day-old rice for best results and ensure all ingredients are prepped before cooking.
