Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup Teriyaki sauce

Fruits

  • 1 cup fresh pineapple chunks

Vegetables

  • 1 cup bell peppers (any color), diced
  • 0.5 cup green onions, chopped

Carbohydrates

  • 2 cups Jasmine rice or brown rice, quinoa, or cauliflower rice

Garnish

  • to taste sesame seeds or chopped nuts

Instructions 

  • Cook your chosen rice according to package instructions, about 15-20 minutes.
  • Cut chicken into bite-sized pieces and marinate with 1 cup of teriyaki sauce for at least 15 minutes.
  • Heat oil in a skillet over medium-high heat, cook chicken for 5-7 minutes until golden and cooked through.
  • Add diced bell peppers and sauté for 3-4 minutes until tender but crisp. Then add pineapple and remaining teriyaki sauce, cook for 2-3 minutes.
  • Assemble bowls by spooning rice into bowls, topping with chicken and pineapple mixture, garnishing with green onions and sesame seeds.

Notes

For extra flavor, sprinkle with chopped nuts or additional green onions.
