A quick and flavorful stir-fry combining tender chicken with colorful vegetables, perfect for a healthy weeknight dinner.

Ingredients

Protein

  • 3-4 pieces boneless, skinless chicken breasts

Vegetables

  • 3 cloves fresh garlic, minced
  • 1 cup mixed bell peppers (red, yellow, green)
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup

Instructions 

  • Chop vegetables into bite-sized pieces.
  • Mix soy sauce, sesame oil, honey, and garlic. Marinate chicken.
  • Cook chicken in a skillet until browned (5-7 min).
  • Add carrots; after 3-4 min, add bell peppers and broccoli. Cook until tender.
  • Toss everything together and serve over rice or noodles.
