A flavorful and easy-to-make chicken dish cooked in the crock pot with sun dried tomatoes, artichoke hearts, and spinach.

Ingredients

Protein

  • 3 lbs chicken breast (boneless, skinless)
  • 6 cloves garlic (pressed)
  • 1 tsp salt
  • 0.5 tsp black pepper

Vegetables & Add-ins

  • 14 oz can artichoke hearts (drained and quartered)
  • 8 oz jar sun dried tomatoes packed in oil (with herbs)
  • 8 oz baby spinach
  • 1 onion diced onion

Instructions 

  • Place chicken in crock pot and season with salt, pepper, and pressed garlic.
  • Top chicken with sun dried tomatoes, artichoke hearts, and diced onion.
  • Cook on high for 2.5-3 hours or low for 3.5-4 hours.
  • Once cooked, add spinach on top and let sit for 5-10 minutes to wilt, then stir in.
  • Serve hot as whole breasts or shredded with toppings.

Notes

For extra flavor, use fresh herbs or additional garlic.
