Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts (1.5 lbs)

Sauces and seasonings

  • 3 cloves fresh garlic minced
  • 0.25 cup hot honey
  • 2 tbsp low-sodium soy sauce

Vegetables

  • 2 pieces bell peppers sliced

Grains

  • 1 cup cooked rice or quinoa

Garnish

  • 2 green onions thinly sliced
  • 1 tbsp sesame oil

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix honey, soy sauce, and garlic; marinate chicken for 15 minutes.
  • Sauté bell peppers in sesame oil until softened, about 5 minutes.
  • Bake chicken for 20-25 minutes until cooked through.
  • Fluff rice, assemble bowls with chicken, peppers, and green onions.
