Instructions
Preheat oven to 425°F (220°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; roast for 20-25 minutes, flipping halfway.
Add broccoli to the sheet pan for the last 12-15 minutes of roasting.
While vegetables roast, cook chicken in a skillet with 2 tbsp olive oil over medium-high heat for 6-8 minutes until browned and cooked through.
Whisk together Dijon mustard, maple syrup, vinegar, and minced garlic to make the sauce.
Pour sauce into skillet with chicken, toss for 1-2 minutes until coated and warm.
Assemble bowls with rice or quinoa, roasted sweet potatoes, vegetables, and chicken. Garnish with parsley or green onions.
Notes
For extra flavor, marinate the chicken with some of the sauce before cooking.
