Ingredients
Chicken

boneless, skinless chicken breasts

heavy cream

fresh baby spinach

sun-dried tomatoes

freshly grated Parmesan cheese

extra virgin olive oil

Salt and pepper
Instructions
Dice the chicken and mince the garlic.
Cook chicken in olive oil until golden (5–7 min), then remove.
Sauté garlic, add spinach, cook until wilted.
Stir in cream, sun-dried tomatoes, Parmesan, herbs, salt, pepper; simmer 3–5 min.
Return chicken to skillet, coat in sauce, cook 1 min.
Serve hot, garnished with extra Parmesan if desired.
Notes
For a lighter version, use half-and-half instead of heavy cream.
