Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cloves fresh garlic (minced)
  • 1 cup heavy cream
  • 4 cups fresh baby spinach
  • 1 cup sun-dried tomatoes (chopped)
  • 1 cup freshly grated Parmesan cheese
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • to taste Salt and pepper

Instructions 

  • Dice the chicken and mince the garlic.
  • Cook chicken in olive oil until golden (5–7 min), then remove.
  • Sauté garlic, add spinach, cook until wilted.
  • Stir in cream, sun-dried tomatoes, Parmesan, herbs, salt, pepper; simmer 3–5 min.
  • Return chicken to skillet, coat in sauce, cook 1 min.
  • Serve hot, garnished with extra Parmesan if desired.

Notes

For a lighter version, use half-and-half instead of heavy cream.
