Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Oil

  • 2 tablespoons olive oil

Seasoning

Garlic

  • 3 cloves garlic, minced

Sun-Dried Tomatoes

  • 1/2 cup sun-dried tomatoes, chopped

Spinach

  • 2 cups fresh baby spinach

Heavy Cream

  • 1 cup heavy cream

Parmesan Cheese

  • 1/2 cup grated Parmesan cheese

Chicken Broth

  • 1/3 cup chicken broth

Italian Seasoning

  • 1 teaspoon Italian seasoning

Instructions 

  • Season chicken with salt and pepper. Heat oil in a skillet and sear chicken until golden and cooked through, about 4-6 minutes per side. Remove and set aside.
  • Sauté garlic in the same skillet until fragrant, then add sun-dried tomatoes and spinach; cook until spinach wilts.
  • Pour in chicken broth, scraping up browned bits. Stir in heavy cream and Parmesan, simmer until sauce thickens.
  • Return chicken to the skillet, spoon sauce over, and cook until heated through. Serve hot with preferred sides.

Notes

For a lighter option, use half-and-half instead of heavy cream.
