Creamy Tuscan Chicken Pasta with Sun-Dried Tomatoes and Spinach

A rich and flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach in a creamy sauce.

Ingredients

Pasta

  • 0.5 pack Linguini pasta (225g)
  • 1 tbsp salt
  • 1 tbsp oil

Chicken

  • 0.5 lb chicken tenders (or chicken breast)
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp cayenne
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 1 tbsp olive oil

Tuscan sauce

  • 2 tbsp unsalted butter
  • 2-3 cloves garlic, chopped
  • 3 tbsp sundried tomato from a jar (including oil juices, crushed or chopped)
  • 8 cherry tomatoes roughly chopped
  • 1.5 cups milk (360g)
  • 0.5 cup cream (120g)
  • 0.75 cup grated parmesan (more for garnish)
  • 0.5 cup reserved pasta water
  • 1 handful spinach leaves, chopped
  • 3-4 leaves basil, chopped (more for garnish)

Instructions 

  • Boil pasta until al dente, reserve ½ cup pasta water, then drain and rinse with cold water.
  • Season chicken thoroughly, cook in oil until seared and cooked through, then rest and slice into strips.
  • In the same pan, melt butter, sauté garlic, add sun-dried and cherry tomatoes, cook 5 minutes, then stir in seasonings, milk, and cream. Boil until cohesive, then add parmesan and reserved pasta water, cook until slightly thickened.
  • Turn off heat, stir in spinach and basil, then add cooked pasta and chicken. Mix well, serve garnished with basil, parmesan, and fresh tomatoes.

Notes

For extra flavor, let the sauce simmer a bit longer to thicken.
