Chicken
0.5lbchicken tenders(or chicken breast)
0.5tspsalt
0.25tsppepper
0.5tspcayenne
0.5tspgarlic powder
0.5tspItalian seasoning
1tbspolive oil
Tuscan sauce
2tbspunsalted butter
2-3clovesgarlic, chopped
3tbspsundried tomato from a jar(including oil juices, crushed or chopped)
8cherry tomatoesroughly chopped
1.5cupsmilk(360g)
0.5cupcream(120g)
0.75cupgrated parmesan(more for garnish)
0.5cupreserved pasta water
1handfulspinach leaves, chopped
3-4leavesbasil, chopped(more for garnish)
Instructions
Boil pasta until al dente, reserve ½ cup pasta water, then drain and rinse with cold water.
Season chicken thoroughly, cook in oil until seared and cooked through, then rest and slice into strips.
In the same pan, melt butter, sauté garlic, add sun-dried and cherry tomatoes, cook 5 minutes, then stir in seasonings, milk, and cream. Boil until cohesive, then add parmesan and reserved pasta water, cook until slightly thickened.
Turn off heat, stir in spinach and basil, then add cooked pasta and chicken. Mix well, serve garnished with basil, parmesan, and fresh tomatoes.
Notes
For extra flavor, let the sauce simmer a bit longer to thicken.
