Ingredients

Pasta

  • 8 ounces rotini pasta (uncooked)

Dairy

  • 3 tablespoons butter (unsalted)
  • 1 pound chicken breast (skinless and boneless, cut into bite size pieces)
  • 1 cup heavy cream (or half and half)
  • 0.5 cup chicken broth (low sodium or no sodium added)

Spices & Herbs

  • 2 tablespoons chili powder
  • 0.5 teaspoon red chili flakes
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon pepper (or to taste)

Vegetables

  • 1 cup tomatoes (chopped)
  • 6 green onions (chopped) green onions
  • 0.5 cup parsley (fresh, chopped)

Cheese

  • 1 cup mozzarella cheese (shredded)

Instructions 

  • Cook the pasta until al dente, then drain and set aside.
  • Melt butter in a large skillet over medium-high heat. Add chicken, spices, salt, and pepper; cook until no longer pink, about 5 minutes.
  • Add tomatoes, green onions, and parsley; cook for 2 minutes. Pour in heavy cream and chicken broth; bring to a boil.
  • Stir in cooked pasta, then sprinkle with mozzarella cheese and additional parsley if desired. Serve warm.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce before serving.
