A flavorful and creamy Thai-inspired noodle dish featuring tender chicken and a spicy peanut sauce, perfect for a quick and satisfying meal.

Ingredients

Noodles

  • 8 oz Rice noodles (Use flat rice vermicelli or wide pad Thai-style as substitutes.)
  • 1 lb Chicken breast (Can substitute with boneless skinless thighs.)

Sauce

  • 1/4 cup Peanut butter (Use smooth, natural peanut butter for best results.)
  • 1/4 cup Soy sauce (Choose low-sodium or tamari for gluten-free options.)
  • 2 tbsp Honey (Warm thick honey briefly to mix more easily.)
  • 2 tbsp Lime juice (Preferably freshly squeezed.)
  • 1 tbsp Sriracha sauce (Adjust to taste for desired heat.)
  • 2 cloves Garlic (Minced, sauté briefly to avoid bitterness.)
  • 1/4 cup Green onions (Chopped, use both white and green parts for flavor.)
  • 1/4 cup Cilantro (Chopped, can substitute with Thai basil or parsley.)

Additional

  • 1 tbsp Sesame oil (Use toasted sesame oil for flavor.)
  • to taste Salt and pepper (Use kosher salt and freshly cracked black pepper.)

Instructions 

  • Cook the rice noodles in salted boiling water until just al dente, then drain and rinse.
  • Season chicken with salt and pepper, then sear in sesame oil until golden and cooked through, about 5-7 minutes.
  • Add minced garlic to the skillet and sauté for 30 seconds.
  • Whisk peanut butter, soy sauce, honey, lime juice, and sriracha, adding warm water as needed to make a smooth sauce.
  • Pour sauce into the skillet with chicken, simmer for 1-2 minutes, stirring to emulsify.
  • Toss cooked noodles into the skillet, stirring for 1-2 minutes until coated and heated through. Finish with green onions, cilantro, sesame oil, and black pepper.

Notes

Adjust spice level with more or less sriracha, and add extra lime or salt to taste before serving.
