Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach

  • 1 tbsp olive oil

Instructions 

  • Cook pasta until al dente, then drain.
  • Heat olive oil and sauté garlic for one minute.
  • Add heavy cream and chicken broth; simmer for five minutes.
  • Stir in chicken and spinach; cook until spinach wilts.
  • Combine pasta with sauce, season, and serve with Parmesan.
