Instructions
Season chicken thighs with salt and pepper, coat with cornstarch, and set aside.
Fry chicken in a pan with oil over medium-high heat for 4 minutes per side until golden, then set aside.
Melt butter in the same pan, add garlic, onion, and mushrooms; stir fry until softened.
Pour in heavy cream, chicken stock, and parmesan; simmer until sauce thickens, then season with Italian seasoning, garlic powder, and lemon juice.
Return chicken to the sauce, baste, and cook for another minute. Garnish with chives before serving.
Notes
