Creamy Garlic Mushroom Chicken

A rich and flavorful dish featuring tender chicken breasts in a creamy garlic mushroom sauce, perfect for a comforting dinner.

Ingredients

Protein

  • 2 oz Chicken Breasts (brought close to room temp)
  • 1/4 cup Flour (see notes)
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 1 tbsp Butter (preferably unsalted)

Vegetables

  • 9 oz Baby Button Mushrooms (sliced fairly thin)
  • 3/4 cup Heavy/Double Cream (at room temp)
  • 3/4 cup Chicken Stock
  • 1 oz Freshly Grated Parmesan
  • 2 cloves Garlic (finely diced)
  • 1 tbsp Fresh Parsley (finely diced, plus more to garnish)
  • 1 tbsp Fresh Chives (finely diced)
  • 1 tbsp Butter (preferably unsalted (can sub oil, for frying mushrooms))
  • 0.5-1 tsp Lemon Juice (see notes)

Seasoning

  • to taste Salt & Pepper

Instructions 

  • Slice each chicken breast horizontally to create 4 even pieces.
  • Mix flour, garlic powder, salt, and black pepper. Dredge chicken in the mixture.
  • Heat oil and butter, cook chicken until golden and cooked through. Remove and set aside.
  • Fry mushrooms in butter until golden, add garlic, then pour in stock and cream. Add herbs and simmer until slightly thickened.
  • Stir in Parmesan, add lemon juice, season with salt and pepper, then reintroduce chicken to coat with sauce. Serve hot.

Notes

For extra flavor, garnish with additional parsley and chives before serving.
