A deliciously creamy and comforting tomato soup enriched with cottage cheese, perfect for any season.
Ingredients

olive oil

onion, chopped

garlic, minced

tomatoes, chopped
((or 2 cans diced tomatoes))

vegetable broth

cottage cheese

sugar (optional)

fresh basil leaves for garnish
Instructions
Heat olive oil in a pot, sauté onion and garlic until softened.
Add tomatoes and vegetable broth, bring to boil, then simmer for 15 minutes.
Use an immersion blender to puree the soup until smooth.
Stir in cottage cheese and blend until smooth.
Season with sugar (if using), salt, and pepper to taste.
Garnish with fresh basil leaves before serving.
Notes
For a richer flavor, use roasted tomatoes.
