A deliciously creamy and comforting tomato soup enriched with cottage cheese, perfect for any season.

Ingredients

Base Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups tomatoes, chopped ((or 2 cans diced tomatoes))
  • 2 cups vegetable broth
  • 1 cup cottage cheese
  • 1 teaspoon sugar (optional)
  • salt and pepper to taste
  • fresh basil leaves for garnish

Instructions 

  • Heat olive oil in a pot, sauté onion and garlic until softened.
  • Add tomatoes and vegetable broth, bring to boil, then simmer for 15 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • Stir in cottage cheese and blend until smooth.
  • Season with sugar (if using), salt, and pepper to taste.
  • Garnish with fresh basil leaves before serving.

Notes

For a richer flavor, use roasted tomatoes.
