A hearty and comforting stew featuring tender chicken, vegetables, and a rich, creamy broth, perfect for cozy dinners.

Ingredients

Protein

  • 1.5 lbs chicken breast (cubed)
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.5 tsp black pepper

Vegetables & Aromatics

  • 1 cup chopped yellow onion
  • 2 stalks celery (sliced)
  • 2 medium carrots (sliced into coins)
  • 2 tbsp butter
  • 4 cloves garlic (minced)

Thickening & Broth

  • 0.25 cup all-purpose flour
  • 5 cups low-sodium chicken broth
  • 2 cups cubed Yukon Gold potatoes
  • 1 tbsp Better Than Bouillon chicken base
  • 1 tsp dried thyme leaves
  • 0.5 tsp dried rosemary leaves
  • 0.5 tsp dried poultry seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp dried sage leaves

Dairy & Garnish

  • 0.5 cup grated Parmesan cheese
  • 0.25 cup heavy cream
  • 2 tbsp chopped parsley

Instructions 

  • Sauté chicken in olive oil with salt and pepper until golden and cooked through, then remove and set aside.
  • Cook onions, celery, carrots, and butter until vegetables soften and onions are translucent.
  • Add garlic and cook until fragrant, then stir in flour to coat vegetables.
  • Pour in chicken broth, add potatoes and seasonings, then simmer until vegetables are tender and broth thickens.
  • Return chicken to the pot, stir in Parmesan and cream, then heat through before serving.

Notes

Adjust seasoning to taste and serve hot with fresh bread.
