Instructions
Sauté chicken in olive oil with salt and pepper until golden and cooked through, then remove and set aside.
Cook onions, celery, carrots, and butter until vegetables soften and onions are translucent.
Add garlic and cook until fragrant, then stir in flour to coat vegetables.
Pour in chicken broth, add potatoes and seasonings, then simmer until vegetables are tender and broth thickens.
Return chicken to the pot, stir in Parmesan and cream, then heat through before serving.
