Instructions
Cook chicken in a pot with water until done, then shred and set aside.
In the same pot, sauté onions and garlic in olive oil until translucent.
Add carrots, celery, broth, and potatoes; simmer until vegetables are tender.
Stir in shredded chicken, heavy cream, basil, and oregano; cook briefly to reheat.
Notes
For a thicker soup, mash some of the potatoes before adding the chicken.
