A hearty and comforting soup combining tender chicken, potatoes, and vegetables in a creamy broth, perfect for a cozy meal.

Ingredients

Protein

  • 2 medium boneless skinless chicken breasts (*)
  • Salt and pepper Salt and pepper
  • 2 tablespoons olive oil (divided)
  • Filtered water Filtered water
  • ½ large white or yellow onion (diced)
  • 3 large cloves garlic (minced or pressed)
  • 3 large carrots (peeled and sliced ¼ inch)
  • 3 celery ribs celery (sliced ¼ inch)
  • 8 cups chicken broth
  • 6 medium red potatoes (scrubbed and cut into 2-inch pieces)
  • ¼ heaping teaspoon dried basil dried basil
  • ¼ heaping teaspoon dried oregano dried oregano
  • ½ cup heavy cream (*)

Instructions 

  • Cook chicken in a pot with water until done, then shred and set aside.
  • In the same pot, sauté onions and garlic in olive oil until translucent.
  • Add carrots, celery, broth, and potatoes; simmer until vegetables are tender.
  • Stir in shredded chicken, heavy cream, basil, and oregano; cook briefly to reheat.

Notes

For a thicker soup, mash some of the potatoes before adding the chicken.
