Dough
2 1/2cupsall-purpose flour(370 grams)
3/4cupfinely ground pecans(90 grams)
3/4teaspoonsalt
1cupcold butter, cut into small chunks(226 grams)
6-7tablespoonsice cold water
Filling
3cupscranberries(300 grams)
1cuppeeled and chopped pears(170 grams)
1cupgranulated sugar(200 grams)
2tablespoonsorange juice
1teaspoonorange zest
1teaspoonvanilla extract
1teaspooncinnamon
1/2cupdried currants(65 grams)
Egg wash
1eggbeaten egg(with 1 tablespoon water)
1tablespoonwater
1/4cupturbinado sugar(50 grams)
Instructions
Make pie dough by combining flour, pecans, and salt. Cut in butter until coarse, then add water until dough forms. Chill for 1 hour.
Cook filling: combine cranberries, pears, sugar, orange juice and zest, vanilla, and cinnamon. Simmer until thickened, then stir in currants. Cool completely.
Roll out dough to 1/8-inch thickness, cut 3-inch circles, fill half with 1 tablespoon of filling, seal edges, and chill for 30 minutes.
Preheat oven to 400°F (200°C). Cut slits on top, brush with egg wash, sprinkle with turbinado sugar, and bake for 20-22 minutes until golden.
