Delight in these flaky hand pies filled with tart cranberries and sweet pears, perfect for a cozy treat or dessert.

Ingredients

Dough

  • 2 1/2 cups all-purpose flour (370 grams)
  • 3/4 cup finely ground pecans (90 grams)
  • 3/4 teaspoon salt
  • 1 cup cold butter, cut into small chunks (226 grams)
  • 6-7 tablespoons ice cold water

Filling

  • 3 cups cranberries (300 grams)
  • 1 cup peeled and chopped pears (170 grams)
  • 1 cup granulated sugar (200 grams)
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 cup dried currants (65 grams)

Egg wash

  • 1 egg beaten egg (with 1 tablespoon water)
  • 1 tablespoon water
  • 1/4 cup turbinado sugar (50 grams)

Instructions 

  • Make pie dough by combining flour, pecans, and salt. Cut in butter until coarse, then add water until dough forms. Chill for 1 hour.
  • Cook filling: combine cranberries, pears, sugar, orange juice and zest, vanilla, and cinnamon. Simmer until thickened, then stir in currants. Cool completely.
  • Roll out dough to 1/8-inch thickness, cut 3-inch circles, fill half with 1 tablespoon of filling, seal edges, and chill for 30 minutes.
  • Preheat oven to 400°F (200°C). Cut slits on top, brush with egg wash, sprinkle with turbinado sugar, and bake for 20-22 minutes until golden.

Notes

Chill the assembled pies before baking for best results.
