Cranberry Orange Chicken Breasts

A flavorful and easy-to-make chicken dish featuring bright orange and tart cranberry sauce, perfect for a quick dinner.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil (divided, or avocado oil)
  • Kosher salt and pepper Kosher salt and pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 large orange (zested and squeezed (around 2/3 cup fresh orange juice))
  • 2 shallots shallots (finely chopped, or cooking onions)
  • 1 cup leftover cranberry sauce (homemade or store-bought)

Garnish

  • freshly chopped parsley parsley (to garnish)

Instructions 

  • Pound the chicken breasts to an even thickness and rub with 1 tbsp of 1 tablespoon olive oil, salt, pepper, garlic powder, oregano, and orange zest.
  • Heat a skillet over medium heat with 1 tablespoon olive oil. Cook chicken 5-6 minutes per side until browned and cooked through. Set aside.
  • Sauté shallots in the remaining oil until golden, then add orange juice and cook for 2-3 minutes, deglazing the pan.
  • Add cranberry sauce and stir to combine. Return chicken to the pan and spoon sauce over it.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, let the chicken rest for a few minutes after cooking.
