These protein-packed cottage cheese egg bites are perfect for a quick, nutritious breakfast or snack. Easy to make and customizable with your favorite vegetables.

Ingredients

Eggs

  • 8 large eggs

Dairy

  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese

Vegetables

  • ½ cup diced bell peppers
  • ½ cup diced onion
  • ½ cup baby spinach, chopped

Spices & Seasonings

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions 

  • Preheat oven to 350°F (175°C). Spray a muffin tin or line with liners.
  • Whisk eggs in a large bowl until well beaten. Mix in cottage cheese until smooth.
  • Stir in cheddar, bell peppers, onion, spinach, salt, pepper, and garlic powder.
  • Pour mixture into muffin cups, filling about ¾ full. Bake for 22-25 minutes until set and golden.
  • Let cool for 5 minutes, then serve warm or store in fridge for up to 5 days.

Notes

For extra flavor, add herbs or hot sauce.
