Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter ((20 g))
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 to 3 sticks celery, chopped
  • 2 to 3 cloves garlic, minced
  • 1/2 tablespoon chopped fresh rosemary
  • 1/2 tablespoon chopped fresh thyme
  • 1 pound chicken fillet ((450 g))
  • 2 tablespoons all-purpose flour
  • 2 cups milk ((475 ml))
  • 1 1/2 pounds potatoes, peeled and cubed ((650 g))
  • 4 cups chicken broth ((1 liter))
  • 1 cup low-fat cheddar cheese ((120 g))
  • a handful fresh parsley, roughly chopped
  • salt and freshly ground black pepper to taste

Instructions 

  • Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, celery, and garlic; sauté until softened.
  • Add rosemary, thyme, and chicken; cook until chicken is browned.
  • Stir in flour, then gradually add milk and chicken broth, stirring constantly.
  • Add potatoes, bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in cheese until melted, then season with salt and pepper.
  • Garnish with parsley before serving.

Notes

For extra flavor, consider adding a splash of lemon juice before serving.
