Instructions
Heat oil in a large pan, sauté onion and bell pepper for 2-3 minutes. Add garlic and ginger, cook for 1 minute.
Add chicken and seasonings; cook for 5-7 minutes until chicken is cooked through, stirring frequently.
Pour in coconut milk and lime juice; simmer for 5 minutes, stirring occasionally.
Serve curry over rice, garnished with cilantro.
Notes
