A quick and flavorful coconut curry chicken recipe that comes together in under 30 minutes, perfect for a satisfying weeknight dinner.

Ingredients

Vegetables

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion (diced)
  • 1 red red bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon finely grated fresh ginger (or ground ginger)

Main Protein

  • 1.5 pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 2 tablespoons curry powder
  • 1.5 teaspoons garam masala
  • 1 teaspoon ground coriander

Seasonings

  • to taste kosher salt and ground black pepper
  • 1 can (13.5-ounce) full-fat coconut milk
  • 1 lime juiced (about 2 tablespoons juice)

Serving

  • 4 cups cooked rice
  • ¼ cup roughly chopped fresh cilantro

Instructions 

  • Heat oil in a large pan, sauté onion and bell pepper for 2-3 minutes. Add garlic and ginger, cook for 1 minute.
  • Add chicken and seasonings; cook for 5-7 minutes until chicken is cooked through, stirring frequently.
  • Pour in coconut milk and lime juice; simmer for 5 minutes, stirring occasionally.
  • Serve curry over rice, garnished with cilantro.

Notes

For extra flavor, add a dash of chili flakes or a squeeze of lime before serving.
