Ingredients

Protein

  • 1 pound Boneless, skinless chicken breasts, diced

Liquid

  • 1 can Coconut milk, light
  • 2 tablespoons Soy sauce, Tamari for gluten-free

Carbohydrates

  • 2 cups Cooked rice, jasmine or basmati

Oils

  • 2 tablespoons Vegetable oil, or coconut oil

Aromatics

  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated

Seasonings

  • 1 teaspoon Lime juice, fresh
  • to taste Salt and pepper

Garnish

  • 1/4 cup Fresh cilantro or green onions, chopped

Instructions 

  • Heat 2 tablespoons of oil in a pan over medium heat. Add garlic and ginger; sauté 1 minute.
  • Add diced chicken; cook 5-7 minutes until browned and cooked through.
  • Pour in coconut milk and soy sauce; simmer 2-3 minutes to meld flavors.
  • Season with salt, pepper, and lime juice; serve over rice and garnish with herbs.

Use fresh herbs for best flavor and adjust seasoning to taste.
