Instructions
Season chicken with salt, paprika, and herbs.
Brown chicken in a hot skillet, then remove and set aside.
Sauté onion, garlic, and ginger; deglaze with broth.
Add tomato paste, coconut milk, and salt; simmer to thicken.
Return chicken to pan, cook a few minutes, then serve over rice garnished with cilantro and coconut milk.
Notes
Use fresh cilantro for the best flavor and adjust spice levels to taste.
