A flavorful and creamy coconut chicken rice bowl that's quick to prepare and perfect for a satisfying meal.

Ingredients

Protein

  • 1 1/2 lbs diced chicken breast
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano or dried herbs
  • 1/2 onion minced onion
  • 3 cloves garlic
  • 1 teaspoon fresh grated ginger (or more if extra gingery)
  • 1/4 cup chicken broth
  • 1 1/4 cup canned light coconut milk (from 1 can)
  • 1 tbsp tomato paste
  • 1/2 teaspoon kosher salt

Garnish & Serve

  • fresh cilantro
  • 3 cups cooked jasmine rice or basmati
  • more coconut milk optional for topping

Instructions 

  • Season chicken with salt, paprika, and herbs.
  • Brown chicken in a hot skillet, then remove and set aside.
  • Sauté onion, garlic, and ginger; deglaze with broth.
  • Add tomato paste, coconut milk, and salt; simmer to thicken.
  • Return chicken to pan, cook a few minutes, then serve over rice garnished with cilantro and coconut milk.

Notes

Use fresh cilantro for the best flavor and adjust spice levels to taste.
