Instructions
Heat 2 tbsp coconut oil in a large pan. Add diced onions and saute until translucent.
Add minced garlic and grated ginger; cook for 1 minute.
Stir in curry powder, red curry paste, and ground coriander until combined.
Add chicken and cook until no longer pink. Then, add red bell pepper and cook briefly.
Pour in coconut milk, lime juice, and brown sugar; simmer until sauce thickens. Add fish sauce and season with salt and pepper.
Notes
