A flavorful and easy-to-make coconut chicken curry perfect for meal prep, combining aromatic spices with tender chicken and creamy coconut milk.

Ingredients

Oil

  • 3 tbsp coconut oil

Vegetables

  • 0.5 cup diced yellow onion
  • 3 cloves minced garlic
  • 2 tbsp grated ginger

Spices and Pastes

  • 2 tbsp yellow curry powder
  • 2 tbsp red curry paste
  • 2 tsp ground coriander

Main Protein

  • 1 lb boneless skinless chicken breast, cubed

Liquids and Flavorings

  • 400 ml coconut milk
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 2 tsp fish sauce
  • to taste Salt and pepper

Instructions 

  • Heat 2 tbsp coconut oil in a large pan. Add diced onions and saute until translucent.
  • Add minced garlic and grated ginger; cook for 1 minute.
  • Stir in curry powder, red curry paste, and ground coriander until combined.
  • Add chicken and cook until no longer pink. Then, add red bell pepper and cook briefly.
  • Pour in coconut milk, lime juice, and brown sugar; simmer until sauce thickens. Add fish sauce and season with salt and pepper.

Notes

Serve with rice or cauliflower rice for a complete meal.
