Ingredients

Spices and Seasonings

  • 1.75 tbsp cinnamon
  • 1 tsp paprika
  • 1.5 tsp ground ginger
  • 0.5 tsp nutmeg
  • 0.5 tsp cayenne pepper
  • 0.5 tsp salt
  • 1.5 lb chicken breast (cut into 1-inch chunks)
  • 1 tbsp Moroccan spice mix
  • 0.25 cup tomato paste (Mutti double concentrated)
  • 1.5 tbsp olive oil
  • 1 cup chicken broth
  • 0.5 tsp garlic powder
  • to taste salt
  • to taste black pepper

Couscous and Vegetables

  • 1 cup couscous
  • 1.75 cups water
  • 1 diced cucumber
  • 1 cup cherry tomatoes (halved)
  • 1 red onion thinly sliced
  • 0.33 cup Greek yogurt (plain, full-fat)
  • 2.5 tbsp fresh parsley (roughly chopped)

Instructions 

  • Season chicken with spices and cook until browned.
  • Simmer tomato paste, broth, and Moroccan spice mix with chicken until cooked through.
  • Prepare couscous by boiling water, then fluffing with a fork.
  • Assemble bowls with couscous, cooked chicken, and fresh vegetables. Top with yogurt and parsley.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
