  • 900 g chicken fillets (or use rotisserie chicken for quick and easy chicken salad)
  • 1 leaf bay leaf
  • 5 g salt
  • 1 g black pepper
  • 960 ml water
  • 180 g mayonnaise (high-quality for best results)
  • 30 ml fresh lemon juice
  • 5 g dijon mustard
  • 1 g garlic powder
  • 1 g onion powder
  • 1 g dried herbs (thyme or tarragon work beautifully)
  • 2 stalks celery (finely diced)
  • 40 g red onion (finely minced)
  • 15 g fresh parsley (chopped)
  • 2 eggs hard-boiled eggs (chopped (optional))
  • 40 g toasted pecans or walnuts (chopped (optional))
  • 40 g dried cranberries ((optional))

Instructions 

  • Cook chicken in water with bay leaf, salt, and pepper until done, then shred.
  • Whisk together mayonnaise, lemon juice, mustard, garlic powder, onion powder, and herbs for dressing.
  • Add celery, red onion, parsley, and optional ingredients to the dressing.
  • Fold in shredded chicken gently to combine.
  • Season to taste, cover, and chill for 30 minutes before serving.
