Ingredients

Protein

  • 1 lb boneless (skinless chicken breasts)
  • ¼ cup honey
  • ¼ cup freshly squeezed lime juice
  • 2 cloves garlic (finely minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste Salt and freshly ground black pepper
  • 1 tablespoon olive oil

Grains

  • 1 cup jasmine rice
  • 2 cups chicken broth

Toppings & Sides

  • 1 ripe avocado (diced)
  • 1 cup corn
  • 1 cup black beans (rinsed and drained)
  • ¼ cup fresh cilantro (roughly chopped)
  • Lime wedges for garnish

Instructions 

  • Marinate chicken in honey, lime juice, garlic, cumin, chili powder, salt, and pepper for 30 minutes.
  • Cook rice in chicken broth for 15 minutes until tender.
  • Cook marinated chicken in olive oil for 6-7 minutes per side until cooked through. Rest and slice into strips.
  • Assemble bowls with rice, chicken, avocado, corn, black beans, and cilantro. Garnish with lime wedges.

Notes

For extra flavor, add a squeeze of lime before serving.
