A flavorful and hearty bowl combining spicy chipotle chicken with fresh vegetables and rice, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 2 pieces chicken breasts
  • 1 cup black beans, drained and rinsed
  • 1 cup sweet corn, canned or frozen
  • 1 cup cooked rice (white or brown)
  • 1 tablespoon chipotle sauce
  • 0.5 cup sour cream or Greek yogurt
  • 1 piece avocado, sliced
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped cilantro

Seasoning

  • Salt and pepper to taste

Instructions 

  • Heat a skillet over medium heat. Season chicken with salt, pepper, and chipotle sauce.
  • Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Rest and slice.
  • Layer cooked rice, black beans, corn, sliced chicken, tomatoes, and avocado in serving bowls.
  • Top with sour cream or Greek yogurt and sprinkle with cilantro. Serve and enjoy!
