Ingredients

Protein

  • 2 lb boneless (skinless chicken breasts)
  • 2 Tbsp olive oil
  • 1 clove garlic (minced)
  • 1.5 tsp ancho chili powder
  • 0.5 tsp chipotle chili powder
  • 1.5 tsp cumin
  • 1.5 tsp coriander
  • 1 tsp paprika
  • to taste Salt and pepper
  • 1 lime juice of lime + zest
  • 2 Tbsp chopped cilantro

Instructions 

  • Whisk together all ingredients except the chicken to make marinade.
  • Marinate chicken in the mixture for at least 30 minutes.
  • Preheat grill to medium and oil the grates.
  • Grill chicken 5-6 minutes per side until cooked through.
  • Rest for 5 minutes, then serve. Enjoy!

Notes

Marinate the chicken overnight for more flavor.
