Instructions
Mix lime juice, olive oil, cilantro, chili powder, cumin, honey, salt, and pepper to make marinade. Marinate chicken for 30 minutes.
Prepare salsa by combining cucumbers, avocado, cilantro, onion, lime juice, olive oil, honey, garlic powder, cumin, salt, and pepper.
Cook chicken in a skillet over medium-high heat for 6-8 minutes until golden and cooked through. Rest before slicing.
Assemble bowls with rice, sliced chicken, and salsa. Optional toppings include lettuce, mango, beans, corn, or cheese.
Notes
