Ingredients

Chicken

  • 1.5 lbs boneless skinless chicken breast (chopped into bite-sized pieces)
  • 2 limes limes (juice and zest) (about 1/3 cup juice)
  • 1.5 tbsp olive oil
  • 2 tbsp cilantro, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tbsp honey

Cucumber Salsa

  • 4 Persian cucumbers chopped cucumbers
  • 1 avocado chopped avocado
  • 1/4 cup cilantro, chopped (more to taste)
  • 1/4 cup red onion, chopped
  • 2 tbsp lime juice (more to taste)
  • 1/2 tbsp olive oil
  • 1 tsp honey (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • to taste Salt and pepper Salt and pepper
  • 2 cups cooked white rice (white, brown, or cauliflower rice)

Instructions 

  • Mix lime juice, olive oil, cilantro, chili powder, cumin, honey, salt, and pepper to make marinade. Marinate chicken for 30 minutes.
  • Prepare salsa by combining cucumbers, avocado, cilantro, onion, lime juice, olive oil, honey, garlic powder, cumin, salt, and pepper.
  • Cook chicken in a skillet over medium-high heat for 6-8 minutes until golden and cooked through. Rest before slicing.
  • Assemble bowls with rice, sliced chicken, and salsa. Optional toppings include lettuce, mango, beans, corn, or cheese.

Notes

For extra flavor, garnish with additional cilantro or a squeeze of lime.
