A flavorful stir-fry featuring tender chicken, colorful peppers, and a spicy garlic sauce served over steamed rice.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons cornstarch
  • 3 tablespoons vegetable oil (divided)
  • 3 cloves garlic (minced)
  • 1-2 red chili peppers red chili peppers (sliced, adjust to taste)
  • 1 red bell pepper red bell pepper (sliced)
  • 1 green bell pepper green bell pepper (sliced)
  • 1 yellow onion yellow onion (sliced)
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • to taste Salt and black pepper
  • 4 cups cooked steamed rice (for serving)
  • for garnish Green onions (sliced)

Instructions 

  • Marinate chicken with soy sauce, rice vinegar, cornstarch, and a pinch of salt. Set aside.
  • Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Cook chicken until browned and cooked through. Remove and set aside.
  • Add remaining oil, then stir-fry garlic, chili peppers, onions, and peppers until tender.
  • Return chicken to the pan, add oyster sauce, sesame oil, and stir to combine. Cook for another 2 minutes.
  • Serve hot over steamed rice, garnished with sliced green onions.

Notes

Adjust chili peppers to your preferred spice level.
