A flavorful one-pan dish combining tender chicken, fresh zucchini, mushrooms, and rice, all cooked to perfection with savory seasonings.

Ingredients

Protein

  • 2-3 pieces large chicken breasts (cooked and chopped)

Grains

  • 2 1/2 cups steamed white rice

Vegetables

  • 1 medium zucchini (sliced and halved, then into 1/4-1/3 slices)
  • 8 oz baby bella mushrooms (sliced)
  • 1 medium yellow onion (peeled and diced)

Fats & Oils

  • 3 tbsp extra virgin olive oil (divided)

Liquids

  • 1 cup chicken broth
  • 1 cup milk

Thickeners & Seasonings

  • 2 tbsp cornstarch
  • 1/2 cup grated parmesan cheese
  • 2 tsp garlic powder

Seasonings

  • to taste salt and pepper

Garnish

  • 2 tbsp chopped parsley (for garnish)

Instructions 

  • Add half the oil to a skillet, cook mushrooms 5 minutes until browned, then transfer to a plate.
  • Add remaining oil and onions, sauté 5 minutes until softened.
  • Add zucchini and cook 2-3 minutes until slightly softened. Return mushrooms, add broth, then whisk cornstarch into milk and pour into skillet, stirring until thickened.
  • Add chicken, cheese, garlic, and rice; stir to combine. Serve garnished with parsley.

Notes

Ensure chicken is fully cooked before chopping. Adjust seasoning to taste.
