A flavorful and quick Asian-inspired dish combining tender chicken, vibrant vegetables, and savory teriyaki sauce over noodles.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, sliced thin

Noodles

  • 12 oz noodles (lo mein, udon, or spaghetti)

Vegetables

  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper sliced
  • 2 green onions sliced

Sauces & Oils

  • ½ cup soy sauce (low sodium)
  • ¼ cup water
  • ¼ cup honey or brown sugar
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water (for thickening)
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons vegetable oil

Garnishes

  • to taste sesame seeds
  • to taste sliced green onions

Instructions 

  • Cook noodles in boiling water until al dente, then drain and set aside.
  • Whisk soy sauce, honey, rice vinegar, sesame oil, and cornstarch to make the teriyaki sauce; set aside.
  • Sear chicken in oil until golden and cooked through; remove and set aside.
  • Stir-fry garlic, ginger, bell pepper, carrots, and broccoli until tender-crisp.
  • Add noodles, chicken, and sauce; toss to coat and simmer briefly until sauce thickens. Garnish with green onions and sesame seeds before serving.

Notes

For extra flavor, toast sesame seeds before garnishing.
