A hearty and flavorful chicken taco soup that's perfect for a cozy meal.
Ingredients
Base Ingredients

olive oil

onion (chopped)

chicken broth

cans
ro-tel diced tomatoes & green chilies (with juices)

black beans (drained & rinsed)

corn (drained)

tablespoon
chili powder

teaspoon
garlic powder

teaspoon
ground cumin

teaspoon
smoked paprika

ounces
cream cheese (softened)
(I used Philly)

cups
cooked/rotisserie chicken (shredded)
salt & pepper (to taste)
toppings (optional): shredded mexican cheese blend, avocado, cilantro, tortilla strips, etc.
Instructions
Sauté oil and onion in a pot for 5 minutes.
Add remaining ingredients except cream cheese, chicken, and salt & pepper.
Bring to a boil, then simmer for 5 minutes.
Add cream cheese, stir until melted.
Stir in chicken and cook for 5-7 minutes.
Season with salt & pepper and serve with toppings.
Notes
For a creamier soup, blend before serving.
