A quick and flavorful chicken stir-fry served over rice noodles, packed with vegetables and savory sauces.

Ingredients

Noodles and Grains

  • 2 cups rice noodles
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breast, sliced thin
  • 2 cups mixed vegetables such as bell peppers, broccoli, and carrots
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 0.25 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • 2 green onions sliced

Garnish

  • to taste sesame seeds (for garnish)

Instructions 

  • Cook rice noodles according to package instructions, drain, and set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add sliced chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, stir-fry vegetables, garlic, and ginger for 3-4 minutes until tender-crisp.
  • Return chicken to skillet, add rice noodles, soy sauce, oyster sauce, sesame oil, and red pepper flakes. Toss and cook for 2-3 minutes until heated through. Garnish with green onions and sesame seeds before serving.

Notes

Feel free to customize the vegetables and spice level to your preference.
