Instructions
Dice the vegetables, cut chicken into 1-inch pieces, and coat with 2 Tbsp flour.
Brown the chicken in butter and olive oil, then remove from pot.
Sauté vegetables until soft, add remaining flour, then return chicken, potatoes, herbs, broth, and simmer for 30 minutes.
Check seasoning, add parsley if desired, and serve hot.
Notes
For extra flavor, let the stew sit for a few minutes before serving.
