A hearty and comforting chicken stew packed with vegetables and flavorful herbs, perfect for a cozy meal.

Ingredients

Vegetables

  • 1 pcs yellow onion
  • 3 ribs celery
  • 4 cloves garlic
  • 0.5 lb carrots

Chicken

  • 1.75 lbs boneless, skinless chicken thighs

Thickening & Fats

  • 4 Tbsp all-purpose flour (divided)
  • 2 Tbsp butter
  • 1 Tbsp olive oil

Potatoes & Herbs

  • 1.5 lbs baby potatoes (cubed Yukon)
  • 1 tsp dried parsley
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 0.5 tsp dried sage
  • 0.25 tsp black pepper (freshly cracked)

Broths

  • 2 cups chicken broth
  • 2 cups vegetable broth
  • 1 Tbsp fresh parsley (chopped, optional)

Instructions 

  • Dice the vegetables, cut chicken into 1-inch pieces, and coat with 2 Tbsp flour.
  • Brown the chicken in butter and olive oil, then remove from pot.
  • Sauté vegetables until soft, add remaining flour, then return chicken, potatoes, herbs, broth, and simmer for 30 minutes.
  • Check seasoning, add parsley if desired, and serve hot.

Notes

For extra flavor, let the stew sit for a few minutes before serving.
