A quick and flavorful one-pan chicken and orzo dish that comes together in just 30 minutes.

Ingredients

Protein

  • 1.5 lb chicken breasts (skinless, boneless)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning

  • 2 tablespoons olive oil
  • 1 cup orzo (uncooked)
  • 5 cloves garlic (minced)
  • 10 oz cherry tomatoes (sliced in half)
  • 2 cups chicken stock
  • 1/4 teaspoon salt
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup basil pesto

Instructions 

  • Season chicken with paprika, Italian seasoning, salt, and pepper. Sear in a large pan with olive oil until cooked through.
  • Add garlic and cook until fragrant. Stir in orzo and cook for 2 minutes.
  • Pour in chicken stock, add cherry tomatoes, and bring to a boil. Reduce heat and simmer until orzo is tender, about 10 minutes.
  • Stir in spinach, heavy cream, and pesto. Cook until spinach wilts and sauce thickens, about 3-5 minutes.

Notes

Use fresh ingredients for best flavor. Adjust seasoning to taste.
