A fresh and vibrant salad combining tender chicken, sweet mango, and creamy avocado for a delicious and healthy meal.

Ingredients

Protein

  • 1 lb chicken breasts
  • 2 medium mango (pitted, peeled, diced)
  • 1 avocado avocado (pitted, peeled, diced)

Vegetables

  • 6 cups romaine lettuce (rinsed, chopped, spun dry)
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 english cucumber sliced cucumber
  • 1/2 small purple onion (thinly sliced)

Toppings

  • 1/2 cup sliced almonds (toasted)
  • 1/4 cup cilantro (chopped)

Dressing

  • 1/2 cup extra virgin olive oil
  • 3 Tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 1 clove garlic (minced)
  • 1 tsp sea salt
  • 1/4 tsp black pepper (to taste)

Instructions 

  • Grill or cook chicken breasts until fully cooked, then dice.
  • Prepare the dressing by whisking together olive oil, vinegar, mustard, honey, minced garlic, salt, and pepper.
  • In a large bowl, combine lettuce, cherry tomatoes, cucumber, onion, diced chicken, mango, and avocado.
  • Drizzle with dressing and toss gently to combine.
  • Top with toasted almonds and chopped cilantro before serving.

Notes

For extra flavor, marinate the chicken in some of the dressing before cooking.
