Instructions
Grill or cook chicken breasts until fully cooked, then dice.
Prepare the dressing by whisking together olive oil, vinegar, mustard, honey, minced garlic, salt, and pepper.
In a large bowl, combine lettuce, cherry tomatoes, cucumber, onion, diced chicken, mango, and avocado.
Drizzle with dressing and toss gently to combine.
Top with toasted almonds and chopped cilantro before serving.
Notes
For extra flavor, marinate the chicken in some of the dressing before cooking.
