Instructions
Whisk hoisin, soy sauce, rice vinegar, Sriracha, and sesame oil in a small bowl; set aside.
Cook onions in oil until soft, then add garlic and ginger; cook until fragrant.
Add ground chicken and cook until opaque, then pour in sauce and cook until thickened. Stir in water chestnuts and green onions.
Make peanut sauce by whisking peanut butter, tamari, maple syrup, garlic, Sriracha, and water until smooth.
Combine cauliflower rice, chopped lettuce, carrots, and chicken mixture in bowls. Drizzle with peanut sauce and serve.
Notes
For a thinner peanut sauce, add water gradually until drizzling consistency is achieved.
