A fresh and vibrant salad combining tender chicken with sweet mango and kiwi, accented by ginger and mint for a delightful flavor.

Ingredients

Ginger

  • 0.5 tablespoons finely grated ginger
  • 0.5 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 cups cooked diced chicken from store-bought rotisserie chicken
  • 1.5 pounds large mangoes, peeled, pitted, cut into 1/2-inch cubes (about 2 cups)
  • 1.25 pounds kiwis, peeled, cut into 1/2-inch cubes (about 2 cups, divided)
  • 1 tablespoon sliced fresh mint plus sprigs for garnish
  • 6 cups chopped romaine lettuce
  • 0.25 cup roasted salted cashews, halved

Instructions 

  • Place grated ginger in a small strainer over a bowl; press to extract 4 teaspoons of ginger juice, discard solids.
  • Mix mayonnaise, ginger juice, lime juice, and lime peel in a medium bowl.
  • Add chicken, mango cubes, 1 1/2 cups kiwi cubes, and sliced mint; toss to coat.
  • Season with salt and freshly ground pepper.
  • Divide lettuce among 4 bowls; mound chicken mixture atop lettuce. Scatter cashews and remaining kiwi cubes; garnish with mint sprigs.

Notes

For extra flavor, chill the salad before serving.
