Instructions
Place grated ginger in a small strainer over a bowl; press to extract 4 teaspoons of ginger juice, discard solids.
Mix mayonnaise, ginger juice, lime juice, and lime peel in a medium bowl.
Add chicken, mango cubes, 1 1/2 cups kiwi cubes, and sliced mint; toss to coat.
Season with salt and freshly ground pepper.
Divide lettuce among 4 bowls; mound chicken mixture atop lettuce. Scatter cashews and remaining kiwi cubes; garnish with mint sprigs.
Notes
For extra flavor, chill the salad before serving.
