A flavorful and cheesy baked casserole featuring shredded chicken, enchilada sauce, and tortillas, perfect for a comforting meal.

Ingredients

spices

  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon chili powder

additional ingredients

  • 1-2 tablespoons avocado oil (can substitute olive oil)
  • 0.5 yellow onion yellow onion (diced)
  • 20 oz red enchilada sauce (homemade recommended)
  • 3 cups shredded chicken (see notes)
  • to taste salt and pepper
  • 3 cloves garlic (minced)
  • 1 15 oz. can black beans (drained and rinsed)
  • 1 4 oz. can diced green chiles (undrained)
  • 2 tablespoons lime juice
  • 1 teaspoon hot sauce
  • 1 teaspoon honey
  • 2 tablespoons finely chopped cilantro (plus more for garnish)
  • 8 6-inch flour or corn tortillas
  • 3.5 cups shredded Mexican cheese (divided)

  • to taste cilantro, diced tomatoes, avocados, jalapenos, red onions (for garnish)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook onions in oil until softened, then add garlic and cook 1 minute. Add chicken, seasonings, beans, chiles, lime juice, hot sauce, honey, and cilantro; heat through.
  • Spread a thin layer of enchilada sauce in a 9x13-inch dish. Layer tortillas, half of chicken mixture, sauce, and cheese. Repeat with remaining ingredients.
  • Cover and bake for 15 minutes, then uncover and bake 15 more minutes. Garnish with cilantro and serve with sour cream and chips.

Notes

For best flavor, use homemade enchilada sauce and rotisserie chicken if possible.
