Instructions
Preheat oven to 350°F (175°C).
Cook onions in oil until softened, then add garlic and cook 1 minute. Add chicken, seasonings, beans, chiles, lime juice, hot sauce, honey, and cilantro; heat through.
Spread a thin layer of enchilada sauce in a 9x13-inch dish. Layer tortillas, half of chicken mixture, sauce, and cheese. Repeat with remaining ingredients.
Cover and bake for 15 minutes, then uncover and bake 15 more minutes. Garnish with cilantro and serve with sour cream and chips.
Notes
For best flavor, use homemade enchilada sauce and rotisserie chicken if possible.
