A flavorful and easy chicken couscous dish with aromatic herbs and lemon slices, perfect for a quick dinner.

Ingredients

Protein

  • 1.25 pounds boneless skinless chicken thighs (4 pieces)
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Grain

  • 1 cup pearl couscous
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves
  • 2 cups chicken broth
  • 0.5 lemon sliced lemon

Instructions 

  • Preheat oven to 400°F. Pat chicken dry and season with garlic powder, paprika, salt, and pepper.
  • Heat olive oil in skillet, cook chicken until golden, then set aside.
  • Add couscous, garlic, and thyme to skillet, toast for 2-3 minutes, then add chicken broth and bring to a boil.
  • Return chicken to skillet, add lemon slices, then bake in oven for 15 minutes until cooked through.

Notes

For extra flavor, garnish with fresh herbs before serving.
