Ingredients

Protein

  • 2 cups shredded rotisserie chicken
  • 4 large flour tortillas 10-inch
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans, drained and rinsed
  • 0.5 cup pico de gallo
  • 0.5 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons olive oil

Salt and pepper to taste

  • Fresh chopped parsley

Instructions 

  • Toss shredded chicken with cumin, garlic powder, smoked paprika, salt, and pepper.
  • Warm tortillas in microwave until pliable.
  • Layer sour cream, rice, seasoned chicken, black beans, cheeses, and pico de gallo on each tortilla, then roll tightly.
  • Cook burritos seam-side down in a hot oiled skillet for 2-3 minutes per side until golden and crispy.
  • Rest for 1 minute, slice diagonally, garnish with parsley, and serve with extra pico de gallo and sour cream.

Notes

For extra flavor, add a squeeze of lime before serving.
