A delicious and easy-to-make pasta salad combining grilled chicken, crisp romaine, and a creamy Caesar dressing.

Ingredients

Pasta

  • 2 cups cooked rotini or penne pasta (cooled)

Lettuce

  • 3 cups romaine lettuce (chopped)

Chicken

  • 2 pieces grilled chicken breasts (sliced or cubed)

Croutons

  • 1 cup croutons

Parmesan Cheese

  • 1/2 cup freshly grated Parmesan cheese

Lemon Juice

  • 2 tbsp lemon juice

Mayonnaise

  • 1/2 cup mayonnaise

Garlic

  • 1 clove garlic, minced

Anchovy Paste (optional)

  • 1 tsp anchovy paste

Dijon Mustard

  • 1 tsp Dijon mustard

Worcestershire Sauce

  • 1 tsp Worcestershire sauce

Instructions 

  • Cook and cool pasta; season and grill chicken, then slice or cube.
  • Wash and chop romaine lettuce.
  • Mix dressing ingredients: mayonnaise, lemon juice, garlic, anchovy paste, mustard, Worcestershire, and Parmesan.
  • Toss pasta, chicken, lettuce, croutons, and Parmesan with dressing. Chill before serving.

Notes

Refrigerate at least 30 minutes before serving for best flavor.
