  • 1 lb Chicken thighs or breasts, boneless skinless
  • 2 tbsp Olive oil (For marinade)
  • 2 tbsp Lime juice (Freshly squeezed)
  • 1 tsp Cumin (Ground)
  • 1 tsp Chili powder (Or more for heat)
  • ½ tsp Smoked paprika (Adds depth)
  • ½ tsp Garlic powder
  • ½ tsp Salt
  • ¼ tsp Black pepper

Other ingredients

  • 4 Large flour tortillas (Burrito-size)
  • 2 cups Cooked rice (White or brown)
  • 1 can 15 oz Black beans (Rinsed and drained)
  • 1 cup Cheddar cheese (Shredded)
  • 1 cup Pico de gallo (Fresh)
  • ½ cup Sour cream (Or Greek yogurt)
  • 1 piece Avocado (Sliced or guacamole)
  • 1 cup Lettuce (Shredded)
  • 2 tbsp Fresh cilantro (Chopped)
  • t tsp Hot sauce (Optional)
  • t tsp Pickled jalapeños (Optional)
  • t tsp Cotija cheese (Optional garnish)
  • lime wedges Lime wedges (For serving)

Instructions 

  • Marinate chicken in spices and lime juice for flavor.
  • Grill or pan-sear the chicken until fully cooked.
  • Heat tortillas until soft and pliable.
  • Layer rice, beans, chicken, and toppings on each tortilla, then roll into burritos.

Notes

For extra flavor, add hot sauce or pickled jalapeños as desired.
