1 3/4lbsboneless skinless chicken thighs
1 1/2cansblack beans with liquid undrained
2earsfresh corn shucked and kernels cut from cobs

2romatomatoes chopped

1/2cupsour cream or Mexican crema
1Tbspolive oil remaining(for cooking)
Hot Sauce
Mexican hot sauce (e.g., Tapatio or Valentino)
Instructions
Combine lime juice, olive oil, chili powder, cumin, garlic, salt, and pepper in a large bowl. Add chicken, toss to coat, refrigerate for 1 hour.
Heat a skillet, add olive oil, sear chicken for 6 minutes per side until cooked through. Rest and slice.
Warm black beans in a saucepan, season with salt if needed, keep warm.
Cook corn kernels in the same skillet until golden and slightly charred, about 3-4 minutes.
