A flavorful and customizable chicken burrito bowl packed with fresh ingredients and vibrant flavors, perfect for a satisfying meal.

Ingredients

Marinade

  • 3 Tbsp fresh lime juice
  • 2 Tbsp olive oil (for marinade)
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 1 1/2 tsp minced garlic

Main Ingredients

  • 1 3/4 lbs boneless skinless chicken thighs
  • 1 1/2 cans black beans with liquid undrained
  • 2 ears fresh corn shucked and kernels cut from cobs
  • 1 cup shredded cheddar cheese
  • 2 roma tomatoes chopped
  • 2 medium avocados chopped
  • 6 Tbsp chopped red onion
  • 1/2 cup sour cream or Mexican crema
  • 1 Tbsp olive oil remaining (for cooking)

Hot Sauce

  • Mexican hot sauce (e.g., Tapatio or Valentino)

Instructions 

  • Combine lime juice, olive oil, chili powder, cumin, garlic, salt, and pepper in a large bowl. Add chicken, toss to coat, refrigerate for 1 hour.
  • Heat a skillet, add olive oil, sear chicken for 6 minutes per side until cooked through. Rest and slice.
  • Warm black beans in a saucepan, season with salt if needed, keep warm.
  • Cook corn kernels in the same skillet until golden and slightly charred, about 3-4 minutes.
  • Prepare toppings: chop tomatoes, avocados, red onion, shred cheese, and scoop sour cream. Assemble bowls with rice, chicken, corn, beans, cheese, tomatoes, avocado, onion, sour cream, and hot sauce.

Notes

For extra flavor, marinate the chicken longer or add fresh cilantro.
